Where does the Oil come from?
Let's talk about that!
Due to Greece's climate, Olives are hand-picked and harvested every year in November. Once they are picked from the tree, they are loaded up and taken to an olive mill (a.k.a processing plant)!
The olives are then cold-pressed by way of a mechanical, heat-free machinery method where the product does not exceed 27 degrees celcius, preserving the olive's antioxidants polyphenols, and delicate, fresh flavours, ensuring higher quality and lower acidity compared to methods using heat or chemicals. This turns the olives into a paste, and utilizing a press to separate the paste from the natural oil.
Once the cold-press process is completed - the folks at the Oil Mill packages the oils and it's shipped in 17-litre tins, and we get it shipped to our home where it is bottled and sealed with our E'gia bottles, and can quickly jump from our home, to yours!

What are the benefits of being unfiltered and uncut?
Because your oil is unfiltered and not blended, it contains:
- More polyphenols
- More antioxidants
- Natural olive particles that enhance flavour and nutrition
- No dilution with cheaper oils (which is common in lower-grade oils).
Unfiltered oil may look cloudy but that often means it's less processed and more nutrient rich.
